As skilled artisans, we knead the pasta dough by hand, and then skillfully shape and cut the pasta using bronze die cuts. The final step is to hang and air dry our prized pasta slowly at low temperatures. The result is a full-flavored pasta that is light and fluffy with a far superior taste. Buon appetito!
